Functional foods have entered the mainstream, but adding a recognised ingredient is not the same as creating a credible product. A cardiologist argues that the category’s next phase will be won on scientific rationale, dose and honest communication, not on the length of the ingredient panel.
Walk through any supermarket and the shift is obvious. Protein has been added to cereals and confectionery, collagen to sparkling water, adaptogens to soft drinks, and medicinal mushrooms to coffee. Functional foods, once a niche pursuit, are now a mainstream expectation.
Much of this reflects something genuinely positive. People are more interested in preventing illness than simply treating it, and they increasingly want everyday foods to support energy, metabolic health, cognitive performance and healthy ageing. As a cardiologist and researcher who has spent decades weighing evidence before making recommendations to patients, I welcome that instinct.
But the category’s rapid growth has exposed a question the industry cannot keep avoiding. Are functional foods being formulated around evidence, or around what is currently fashionable?
Adding an ingredient is not the same as adding a benefit
The most common error in functional product development is to begin with a list of appealing ingredients and work forwards, rather than beginning with a physiological objective and working back. A recognisable name on the label is treated as though it were a benefit in itself.
It is not. The science lies in the formulation, and formulation asks hard questions. What biological pathway are we trying to influence? Which ingredients have the strongest evidence for that pathway? At what dose was that evidence generated? Is the ingredient stable in this format? Does it interact well with the others? And can a person realistically consume it consistently enough for any of this to matter?
Those questions are far more demanding than asking what is trending, and they are where credibility is either earned or lost.
Consider dose, which is where a great deal of functional formulation quietly falls apart. Oat beta-glucan is a useful case. The evidence that it lowers LDL cholesterol is strong, but it is also specific. European and Australian regulators recognise the effect at an intake of at least three grams of beta-glucan per day, following reviews by the European Food Safety Authority and Food Standards Australia New Zealand. Below that threshold, the same ingredient does not carry the same claim. This is the distinction between evidence for an ingredient and evidence for a finished product. A food can contain a well-studied compound and still deliver too little of it to reproduce the result the studies describe. Problems arise when the presence of a familiar ingredient encourages consumers to infer a benefit that the finished product, at its stated dose, has not demonstrated. The label may be technically accurate while still leaving an impression that extends beyond the available evidence.
What “evidence‑based” should actually mean
Several principles separate disciplined formulation from decoration.
Ingredient evidence is not finished-product evidence. A trial showing that an isolated compound influences a marker does not establish that a particular food containing it will do the same, at its dose, in its format, in the people who will actually eat it.
Form and bioavailability matter. The chemical form of an ingredient, and whether the body can absorb it from that matrix, can be the difference between an active dose and a decorative one.
Population and context matter. An effect demonstrated in people with elevated cholesterol or metabolic syndrome cannot be assumed to transfer to a general healthy population, and vice versa.
Regulatory compliance is a floor, not a ceiling. Meeting labelling law means a product is lawful. It does not, by itself, prove that an ingredient is present at a clinically meaningful dose.
Honest communication of uncertainty strengthens credibility rather than weakening it. Acknowledging where evidence is strong, where it is still emerging, and where a mechanism is plausible but unproven, is a mark of scientific maturity, not a lack of conviction.
None of this is anti-innovation. In a fast-growing category, commercial pressure can result in trending ingredients being incorporated before their role within the complete formulation has been properly justified. The remedy is not to abandon functional foods, but to hold them to the standard the science already sets.
Restraint as a signal of discipline
A related misconception is that a longer ingredient list signals a more advanced product. Often the opposite is true. Combining a dozen fashionable additives, each at a fraction of its studied dose, produces a crowded label and very little defensible benefit. Choosing fewer ingredients, each present for a clear reason and at a sensible level, usually reflects greater confidence, not less.
Coffee illustrates why the delivery vehicle can matter as much as the ingredients.
For many years, coffee was viewed with suspicion, largely because of its caffeine content. However, contemporary, high-quality meta‑analyses consistently show that moderate coffee consumption is associated with lower all‑cause and cardiovascular mortality, with benefits plateauing at around 4–5 cups per day. These findings are reinforced by the comprehensive 2026 American Heart Association Scientific Statement, Caffeine and Cardiovascular Disease, published in Circulation.
Although these findings come mainly from observational studies rather than clinical trials, they are supported by strong laboratory research in cells and animals. Coffee contains hundreds of natural compounds, including antioxidants with anti-inflammatory effects, while caffeine itself has well‑understood biological actions. Together, these provide a scientifically credible explanation for why moderate coffee consumption may benefit heart, brain and overall health. Overall, the message from the American Heart Association Scientific Statement is reassuring: for most adults, moderate coffee consumption can reasonably form part of a healthy dietary pattern.
That matters for formulation because coffee is already one of the world’s most established daily rituals. Behaviour change is hard, and the supplement aisle is littered with products people buy once and abandon. An existing habit, by contrast, can be a practical delivery vehicle, provided the formulation, the dose, the safety profile and the communication are handled responsibly. The principle holds well beyond coffee: the best functional food is one a person will actually consume consistently, formulated so that every ingredient is included for a clear purpose and at a dose the evidence can support.
From evidence to everyday life
The challenge is not simply developing better functional foods. It is helping people make evidence‑based health decisions every day.

As consumers grow more informed, evidence stops being a marketing accessory and becomes the competitive advantage. For a category built on the promise of better health, that is exactly as it should be.
