I spent years formulating low-carbohydrate, low-calorie, high-protein and gluten-free foods. That work taught me a lesson that is easy to miss when a new ingredient has exciting research behind it: an ingredient is not a finished product.
A study can tell you that an ingredient has a promising mechanism, that a particular dose produced an effect in a defined population, or that one delivery system improved absorption. It cannot automatically tell you that the food, drink or supplement you are building will taste good, remain stable, deliver the labeled nutrition or reproduce the same result.
That gap between ingredient research and finished-product performance is where much of the real product-development work begins.
Formulation can change what the body receives
Recent research offers a useful reminder that the same ingredient can behave differently depending on how it is delivered. A 2026 randomized crossover trial of xanthohumol found that a micellar formulation produced approximately nine times the systemic exposure of the native form. Yet the same trial recorded no acute changes in resting energy expenditure, blood pressure or heart rate for the higher-bioavailability formulation.
The lesson is not that the ingredient failed. It is that bioavailability and efficacy are separate questions. A formulation may improve exposure without proving a particular consumer benefit.
A 2026 randomized study of two lutein formulations reached a similar conclusion from another direction. The oil-based test formulation produced substantially higher systemic exposure than the reference formulation, but the researchers still called for future clinical efficacy studies. Better absorption can be important, but it does not finish the evidence chain.
This distinction matters because consumers do not buy isolated ingredients. They buy a finished powder, drink, bar, capsule or food. Every other component in that product, along with its dose, processing, packaging and intended use, can affect what reaches the consumer and how the consumer experiences it.
The Federal Trade Commission makes this point directly in its health-products guidance. Its example of a sports drink containing a “clinically tested ingredient” warns that a claim about the ingredient may also communicate that the finished drink provides the same benefit. Depending on the circumstances, experts may require testing of the finished product rather than relying only on research about one isolated component.
Taste is part of product performance
I learned this firsthand while working with monk fruit extract. Monk fruit is extremely sweet, but the correct amount depends on everything around it. A formula can move quickly from not sweet enough to too sweet. Finding the right level requires more development work than simply substituting it for sugar.
It also does not play equally well with every ingredient. Pea protein, for example, can be difficult to cover because of its distinct flavor. In some formulations I used peanut butter or blended the pea protein with another plant protein such as sacha inchi, which has a more nut-like flavor. That gave the flavor system a better foundation and allowed the monk fruit to work more naturally.
This is why “good for you” cannot be the whole product strategy. A brand may have excellent nutrition, a compelling ingredient story and responsible positioning, but if the product does not taste genuinely good, repeat purchase usually suffers. Consumers may try a health product once because of a claim or a trend. They keep buying it because it fits into their lives and they enjoy using it.
Recent work on food-derived bioactive peptides shows the same tension at a scientific level. A 2026 review identifies processing instability, gastrointestinal degradation and sensory drawbacks such as bitterness as major barriers to successful oral products. Delivery systems may help protect an ingredient, but commercial success still requires safety, manufacturability and a sensory experience people will accept.
Verification has to match the label
For the products I formulated, laboratory verification of nutritional values was never optional. Many customers relied on our low-carbohydrate, low-calorie, high-protein and gluten-free foods as part of weight-management or specialty-diet routines. Nutritional accuracy was essential both for consumer trust and regulatory compliance.
That means testing the product people will actually consume, not assuming that spreadsheet calculations or supplier specifications tell the whole story. Formulation changes, ingredient variability, serving size and processing can all affect the finished result.
The same standard applies to health claims. FTC guidance says objective health-related claims must be truthful, not misleading and supported by competent and reliable scientific evidence. It also treats implied claims as seriously as express ones. A marketer cannot borrow the authority of a study while quietly changing the ingredient form, dose, population or outcome.
FDA guidance places responsibility for dietary-supplement safety, labeling and manufacturing quality on manufacturers and distributors. Current good manufacturing practices are intended to help ensure identity, purity, quality, strength and composition. Because supplements are generally not approved by FDA before marketing, the company behind the product carries the initial responsibility for getting these fundamentals right.
Stability testing is a second round of formulation
A product that works on the development bench still has to survive its intended shelf life. Stability testing can reveal that a formula will not last as long as planned, that flavor or texture changes, or that an ingredient no longer meets its target at the end of the stated period.
When that happens, the honest answer is often reformulation. Packaging may need to change. Moisture, oxygen, light or temperature may need tighter control. An ingredient interaction that looked harmless at launch may become obvious only after time passes.
Stability is not paperwork added after the creative work. It is evidence about whether the product you designed remains the product you promised.
Consumers complete the development cycle
Formal testing matters, but so does disciplined feedback from real people. At one point I had more than 70 employees, and many were eager to taste-test new products. My wife and friends were also valuable because they were willing to be honest. Early feedback helped identify sweetness, texture and flavor problems before those problems reached a larger market.
After launch, ratings, complaints, returns and repeat-purchase behavior become another form of product intelligence. On Amazon and other ecommerce channels, I treated a rating of four stars or higher as an important operating threshold. Falling below that level was not just a marketing problem. It was a signal to study the complaints, determine whether the product needed reformulation and, in some cases, consider discontinuation.
Customer reviews cannot prove a clinical benefit, and they should never be used as a substitute for appropriate scientific evidence. They can, however, show whether the product is delivering the taste, convenience, packaging and everyday experience that encourages people to keep using it.
Build something people need, not merely want
My simplest product-development rule is to make a product people need, not merely want. A needed product solves a recurring problem strongly enough that customers feel the difference when it is missing. A wanted product may attract attention, but customers can postpone it, skip it or decide they do not have to buy it again.
That does not mean manufacturing dependency or exaggerating a health claim. It means solving a real, repeated consumer problem with a product that works reliably in ordinary life.
Ingredient research is the starting point. The finished product still has to deliver the right ingredient in the right form, taste good, match its label, remain stable and earn repeat use. The companies that do all of that are not simply selling a promising ingredient. They are turning evidence into a product people can trust.
